Ingredients

  • ¼ cup chopped white onion

  • 1 fresh jalapeño pepper, seeded, stem removed, and chopped (optional)

  • 1 - 2 cloves garlic, chopped

  • 8 ounce medium yellow cheddar cheese, shredded (1 cup)

  • 4 ounce sharp white cheddar cheese, shredded (1/2 cup)

  • 1 4 ounce jar diced pimiento, drained

  • cup mayonnaise, or more to taste

  • teaspoon ground white pepper, or more to taste

  • teaspoon bottled hot pepper sauce (optional)

  • 2 - 3 medium cucumbers, sliced 1/4-inch thick

  • Celery leaves (optional)

Directions

  1. In a food processor, combine the onion, jalapeño (if using), and garlic. Cover and process with several on/off turns to finely chop.

  2. In a large bowl combine the cheeses, pimiento, processed vegetables, and mayonnaise; mix just until combined. Season with white pepper and, if desired, hot pepper sauce. Serve cheese spread on cucumber slices. Top with celery leaves if desired.

When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands well with soap and water.

Pretty Presentation

Before slicing, peel the cucumber lengthwise, using a vegetable peeler to remove some strips of skin, for a striped effect.
