Ingredients

  • 1 egg, lightly beaten

  • ½ cup water

  • ¼ cup finely chopped onion, leek, shallot, or green onions

  • ¼ cup grated Parmesan, Romano, or Asiago cheese (1 ounce)

  • 2 tablespoon snipped fresh basil or parsley or 1 teaspoon dried basil or parsley, crushed

  • 2 tablespoon Worcestershire sauce or steak sauce

  • 1 ½ teaspoon instant beef bouillon granules

  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper

  • 1 pound ground beef*

  • 1 pound ground pork*

  • 8 onion buns, hamburger buns, or kaiser rolls, split and toasted

  • 1 recipe Mustard Sauce

  • Lettuce leaves (optional)

  • Thin tomato slices (optional)

  • Thin red onion slices (optional)

  • Dill pickle spears (optional)

Mustard Sauce

  • cup stone-ground mustard

  • 2 tablespoon beer or apple juice

  • 1 tablespoon honey

  • ½ teaspoon Worcestershire sauce or steak sauce

Directions

  1. In a large bowl combine egg, the water, onion, cheese, basil, Worcestershire sauce, bouillon granules, garlic powder, and pepper. Add beef and pork; mix well. Shape meat mixture into eight 3/4-inch-thick patties.

  2. For a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until done (160°F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as directed.)

  3. Serve burgers on buns with Mustard Sauce. If desired, top with lettuce, tomato slices, and onion slices, and serve with pickle spears.

Mustard Sauce

  1. In a small bowl combine mustard, beer, honey, and Worcestershire sauce.

*Tip:

To grind your own meat, cut 1 pound boneless beef chuck roast and 1 pound boneless pork sirloin into 1-inch pieces. Using the meat grinder attachment of your mixer, grind the meat according to manufacturer's directions.
